Root Cellaring & Long Storage

No equipment or processing at all, just the right conditions. The oldest preserving method there is.

How it works

Most root vegetables and alliums store best cool (around 0-4°C for most root veg, slightly warmer and drier for onion and garlic), dark, and humid enough to prevent shrivelling but not so wet that rot sets in. A cool cupboard, garage, or an insulated box outdoors can substitute for a true cellar in most Australian climates.

Safety

Only store produce free of cuts, bruises, or disease, damaged pieces rot and can take healthy neighbours with them. Check stored produce periodically and remove anything showing spoilage promptly.
